Lemon Posset
This delicious dessert will not only satisfy your sweet tooth, it only has three ingredients making it the easiest dessert ever! Lemons, sugar, heavy cream and you are set. It is the perfect thing to make ahead because it is even better after being in the fridge overnight. I added edible flowers from my towers, but trust me, it is perfect on its own.
Ingredients:
Zest of two lemons
1/2 cup fresh lemon juice
2/3 cup sugar
2 cups heavy cream
Pour the lemon juice in a sauce pan, add the zest and sugar and stir until the sugar dissolves. Slowly bring to a gentle simmer. It should have the consistency of syrup.
Set aside and let cool.
Pour the heavy cream into a sauce pan and bring to a gentle simmer for about 5 minutes. Cook slowly and stir the bottom to keep it from burning.
Remove from the heat.
Slowly pour the lemon syrup into the heavy cream. Strain the mixture and pour into serving dishes or ramekins. Once they are at room temperature, cover with plastic wrap and put in the fridge for at least four hours.
