Nairobi Inspired Mango Lassi
When I moved to Kenya, I had no idea what a huge influence Indian culture had on the region. I soon realized most businesses where owned by Indian immigrants. After The British East Africa Protectorate in 1895, that had strong connections with Bombay in British India, Indians were attracted to the area. They built the railroads, worked in the mines and make up one third of the population in Nairobi.
I quickly noticed Mango Lassi on the menu at my favorite coffee shop and it became my daily ritual. This refreshing drink originated sometime around 1000 BC and is said to have Ayurvedic healing properties that calm the stomach and mind.
While I wish we had an Indian restaurant in Montezuma County, it is easy to make at home for my boys.
Ingredients:
-1 cup frozen mango (if you have fresh honey mangos, be sure to freeze them overnight before using in this recipe)
-1/2 cup whole or coconut milk
-1/3 cup plain yogurt
-2 tbs cane sugar
-pinch of cardamom powder
-splash of rose water
Put in the blender and blend on high until smooth. The consistency should be a little runnier than a smoothie. Serve immediately.
